Basically Instant Text:
  • converts the expansion to uppercase whenever the abbreviation you typed is all uppercase
  • capitalizes the expansion whenever the abbreviation you typed is capitalized

Based on this, the only way round I found to "fool" Instant Text is to add the following typo:

we => w{Unicode}101{/Unicode}

(101 is the ascii code for 'e').

If you type we, you will get we.
If you type We, you will get We.
If you type WE, you will get We.

I guess that's what you are looking for? :-)
